A pitaya / p ᵻ ˈ t aɪ . ə / or pitahaya / ˌ p ɪ t ə ˈ h aɪ . ə / is the fruit of several cactus species indigenous to the Americas.  " Pitaya " usually refers to fruit of the genus Stenocereus , while " pitahaya " or " dragon fruit " refers to fruit of the genus Hylocereus .
Select a ripe fruit , then cut it in half , scoop the flesh out with a spoon. You can also grill the fruit by cubing it and skewering it. Alternatively, toss it into a blender with some yogurt, and make a smoothie. If you prefer something cooler, you could turn it into a sorbet.
